Carrot and lime crecy soup
Carrots and limes are a great pair together, limes adding a discrete acidulated touch to the sweet flavour of the carrots. This simple four ingredient potage is family cooking as I like it most. A no brainer to prepare and a deliciously rewarding and wholesome dinner, eaten with thick slices of bread and cheese on a cold evening. The carrots will tan your skin too, a most appropriate antidote to this week's ghastly weather...

Serves: 4 to 6 
Peel, trim the ends off and slice the carrots.

Toss them into a large pot and add the chicken stock.

Bring to the boil, reduce the heat and let bubble gently for about 40 minutes or until the carrots are tender.

Mix the carrots with a stick blender, add the juice of the 2 limes, the cream and mix again. Toss the pressed half limes into the soup, stir, and allow them to infuse for 5 minutes.

Take the limes out, stir well and season to taste. Serve with freshly chopped coriander, grated cheese and croutons.

If you want to increase the carbs in this soup, cook 90 g round rice with the carrots and the stock, and halve or forego the cream. The rice will bind and thicken the soup.
