Chicken simply wrapped in Prosciutto with sweet potato purée
This really simple, fine dish is a pleaser on so many levels. It gets two thumbs up with my children, uses essentially only 3 ingredients and requires minimal work, including almost no dirty dishes to wash afterwards and no crumbs under the table (those of you with little messy eaters will no doubt appreciate this massive quality). In sum, an ideal dinner for an ideal family evening. Now get that cork opener out.

Chicken simply wrapped in Prosciutto with sweet potato purée

Serves: 4 
Preheat the oven to 180 degree C

Place a sprig of rosemary on top of each chicken breast and wrap with a slice of parma ham or pancetta. Brush the top with olive oil and place on baking paper or aluminum foil on a tray in the oven.

Cook for about 20-25 minutes or until no blood comes out of the chicken when cut.

Wash the sweet potatoes (do not peel them), do not dry them off. Puncture a few times with a fork. Place on a paper towel in the microwave and cook for about for about 10 minutes. Do this in two 5 min stages, turning over the potatoes halfway through. Add a few minutes if needed at the end, the potatoes must be cooked through.

Remove the skins and mash with the back of a fork, adding a bit of warm milk and a generous dollop of butter. Add the ground coriander if using. The puree can be a bit fibrous, which I actually quite like. My children however are not so keen on this texture so I give it a quick whizz with my hand blender to obtain a smooth consistency.

Add salt and pepper to taste.

Serve the chicken on top of the puree.

Don’t do this recipe with regular bacon slices. I tried it once and fat exploded all over my oven, the exact opposite outcome of what this recipe is trying to achieve: no fuss, no washing up.

4 chicken breasts
4 slices of parma ham or thinly sliced pancetta
2-3 large sweet potatoes ( 600 g)
60 ml milk
a big dollop (40 g) of butter
Olive oil
Salt and pepper
Optional; 1/2 teaspoon crushed or ground coriander seeds
