Fusilli with broccoli and bread, garlic and bacon crumbs
Attention please, I am about to share with you another food accessory (trumpets please!), the divine bacon, garlic and bread crumbs. These will transform a simple pasta, salad, mash, or fish into a punchy, crunchy and unforgettable experience. Fusilli with broccoli and bread, garlic and bacon crumbs

Preheat the grill of your oven.

Cut the broccoli into small florets and steam for 7-8 minutes, until crisp tender.

Cook the pasta according to packet instructions in salted water with a dash of olive oil.

If using fresh bread slices, toast them. Dice the bread into small cubes and shred the bacon slices. Mix both with the garlic, olive oil and herbs. Spread on a piece of greaseproof paper and broil under the grill for 8-9 minutes, mixing half-way through, until the mix is nicely browned.

When the pasta is ready, drizzle it generously with olive oil and adjust the seasoning. Mix with the broccoli and top with the crumbs, and serve with parmsesan flakes on the side.

You can also make these crumbs by substituting 4 anchovies in oil to the bacon. For a vegetarian version, just stick to the bread and add a bit of salt and pepper.
Ingredients

1 large head of broccoli
375 g fusilli
2 slices of fresh or dried bread
4 thin slices of bacon
3 teaspoons olive oil, plus a drizzle for the pasta
1 large garlic clove, pressed through a garlic press or finely chopped
Leaves off 1 rosemary sprig, finely chopped (you can also use thyme)
Salt and pepper
Flaked parmesan
