Quiche with cauliflower, goat’s cheese, herbs and almond milk
This quiche is made with a crunchy no-butter oat crust and a lighter filling using almond milk instead of cream. If your family members are not so keen on cauliflower, here is your chance to reconcile them with this lovely vegetable. Grated into the filling, its soft, almost sweet flavour combines nicely with the almond milk to delicately enhance the flavour of the chalky goat's cheese chunks. As good for your palate as it is for your health.

Serves: 6 to 8 
Lightly oil a tart dish (loose-base if possible, this will allow you to unmould the quiche easily) and line it with the pastry. Pierce it on several places with a fork.

Preheat the oven to 200 degrees.

Grate the cauliflower using the large holes of your grater.

Mix the olive oil with the eggs. Stir the flour into the egg mixture then add the milk slowly. Season with 1/2 teaspoon salt, pepper, and a pinch of nutmeg.

Toss in the cauliflower, crumbled goat's cheese, herbs and pine nuts and mix.

Pour the cauliflower mixture inside the crust and bake for 35 minutes or until nicely browned.

Let cool for 10 minutes before unmoulding and cutting slices, and serve with a green salad.

If you like the crust on the tender side, add one egg to the pastry recipe. if you prefer it on the crunchy side, skip the egg.

Almond milk can be found in larger supermarkets and all health stores.

Savoury version of the olive oil and oats shortcrust pastry or 1 ready made shortcrust pastry
About 350 g cauliflower (a small-medium head)
1 tablespoon flour
1 tablespoon olive oil
2 eggs
350 ml almond milk
150 g goat's cheese
4 tablespoons fresh herbs (coriander or parsley work both very well)
2 tablespoons toasted pine nuts
a pinch of nutmeg
Salt and pepper
