Pour the apple juice into a small saucepan, toss in the apricots and curry and bring to the boil. Cover and simmer on low heat for 20 minutes.
Meanwhile, heat the olive oil in a large, non stick pan. Add the shallots and turkey chunks and sauté for 5-6 minutes on all sides over medium heat, until browned and cooked through. Take out of the pan and reserve.
Add the spinach to the pan and sauté for 2 minutes, until the leaves are just wilted.
Whiz the apricot and apple juice together, season to taste and pour into the pan with the spinach. Add the turkey back into the pan, mix and simmer for a couple of minutes.
Serve immediately with rice.
