		<description>Leeks with eggs, spinach and tomatoes.  Chop up the leeks, scramble the eggs with a little milk and pour into a frying pan that can go in the oven.  Cook, until set, then add fresh spinach and tomatoes(or a can of diced tomatoes0, parmesan cheese, cover and place in the oven until the spinach has relaxed.  Delicieux!</description>

I love mackerel but it is often overlooked by many in favour of more expensive fish, but it has wonderful flavour and texture. This dish combines some fantastic flavours that make it really special and deserving of any restaurant table. Surprisingly easy to prepare. The leek and chorizo is a great combination and would probably work well with other fish. I didn&#039;t bother with the shallot crisps.
